The Beef Fillet is the most prized beef cut, quick cooking and extremely lean with virtually no fat content which melts in your mouth and is full of flavour.
A classic steak and cut, these are some of the least worked parts of the animal and as such are extremely tender - almost falling apart when you eat it. The cut of beef itself sits beneath the ribs next to the back bone. The Fillet steak is much leaner, with a lower fat content than the ribeye cuts for example, but still extremely flavoursome and succulent.
The centre cut can either be portioned into individual fillet steaks, cooked whole as a decadent roasting joint, or made into a Beef Wellington.

Our beef is sourced from Mullingar, Co. Westmeath and fed a grass based diet by farmers who we know and trust.
