Our spring lambs come from the sunny south-east county of Wexford.
Legs of Lamb are renowned for being lean yet full of flavour, and makes an excellent choice for a roasting joint when you want to impress.
Each lamb leg weighs a minimum 2.2kg and will provide 6 / 8 adult servings (depending on how hungry you are).
Remove from fridge 90 minutes before cooking and allow to come to room temperature.
Cook at 160°C for 90 minutes for medium if you like it pink (best flavour).
Leave to rest covered with tinfoil and a tea towel for 35 minutes after cooking.
